DID YOU EVER EAT A CHAPATI? HERE'S THE RECIPE

Every culture has a flat bread. Matzo for Jewish people, bocaccio (probably spelled that wrong), for Italians, chapatis for the Indians/Pakistanis, tortillas for the Mexicans and Scandinavians make theirs...

It is made quickly, providing sustenance and energy.

I had it in the early 60s when I ventured solo to Trinidad. I visited a home; the family excited to host an American. A chicken was slaughtered for roti, and the feathers were still on the back steps. Mrs. Ali invited me to cook in the kitchen, and together we made chapatis for five of us to eat with the roti.

She cooked them, if I remember correctly on the covered grates of her woodstove, cooking several at a time and stacking them up like pancakes.

They were delicious and filling and perfect for dipping into the gravy.

Here's a recipe for Trinidadian chicken roti, but we didn't fill the chapatis - it was served in a bowl and we ate it with the flatbread.
